Ingredients

  • 1 lb. grape or cherry tomatoes
  • 4 tablespoons extra virgin olive oil divided
  • 4 garlic cloves thinly sliced
  • 1 small red onion optional, thinly sliced
  • 1 to 2 small fresh red chilies optional, thinly sliced or a pinch of chili flakes
  • Sea salt flakes to taste
  • Freshly cracked black pepper to taste
  • 7 ounces block of creamy feta cheese
  • A handful of fresh basil leaves
  • Crusty bread for serving
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Equipment

  • Oven

Method

Step 1: Preheat the Oven
  1. Before you do anything, preheat your oven to 400°F (200°C). A hot oven is crucial for roasting those cherry tomatoes and bubbling the feta.
Step 2: Prepare the Tomatoes
  1. Take your grape or cherry tomatoes and place them in a baking dish. Drizzle with two tablespoons of olive oil. Add a pinch of sea salt and black pepper. This is where the flavor begins. Toss them gently to ensure they’re well-coated.
Step 3: Add Aromatics
  1. Next, add your thinly sliced garlic and red onion (if using) to the tomatoes. Scatter them throughout the dish. You can also add the sliced red chilies here if you’d like that extra heat.
Step 4: Place the Feta
  1. Now it’s time for the star of the show! Place the block of feta cheese in the center of the dish. Surround it with the tomatoes and aromatics. Drizzle the remaining olive oil on top of the feta.
Step 5: Roast
  1. Pop the dish into the preheated oven. Roast for about 25-30 minutes. You want the feta to become soft and slightly golden. The tomatoes should burst, releasing their juices and creating a beautiful sauce.
Step 6: Final Touches
  1. Once your dish is out of the oven, add a drizzle of balsamic vinegar and honey. Scatter fresh basil leaves over the top. These final touches enhance the flavor profile of the dish.
Step 7: Serve and Enjoy
  1. Serve the baked feta with cherry tomatoes hot, alongside crusty bread for dipping. Enjoy the burst of flavors and the joy of sharing!
