  • 1 teaspoon honey
  • 1/2 teaspoon active dry yeast
  • 3 1/4 cups high-gluten flour
  • 1 1/2 teaspoons fine sea salt
For the Grandma pizza
  • 3 cloves garlic finely chopped
  • 1/4 teaspoon red pepper flakes
  • 12-16 ounces fresh mozzarella sliced
  • 1 28- ounce can San Marzano tomatoes crushed by hand and thoroughly drained
  • 1 ~24-ounce dough ball from above
  • 3/4 cup olive oil divided
  • 1 teaspoon dried oregano or Herbes de Provence
  • 3 tablespoons Parmigiano-Reggiano cheese grated
  • 1/2 teaspoon kosher salt
  • A drizzle of balsamic glaze

Step 1: Prepare the Dough
  1. In a mixing bowl, combine the chilled water, honey, and active dry yeast. Let it sit for about 10 minutes until it becomes frothy. This is your yeast activating, which means it’s ready to work its magic!
  2. In another bowl, mix the high-gluten flour and salt. Slowly add the yeast mixture into the flour. Stir until a dough forms. You can use your hands for a more personal touch.
  3. Knead the dough for about 8 minutes until smooth and elastic. This is the part where you really feel like a chef.
  4. Lightly oil a clean bowl, place the dough inside, cover it with a towel, and let it rise for 1-2 hours, until doubled in size.
