Ingredients

  • 4 large egg yolks 60 g approximately
  • 4 tablespoons 24 g stone-ground mustard
  • ½ cup 114 g raw cane sugar
  • ¼ cup 70 g aromatic white wine vinegar
  • 1 teaspoon 4 g fine kosher salt
  • 1 cup 240 g heavy whipping cream
  • ½ teaspoon freshly grated lemon zest
  • ¼ teaspoon smoked paprika

Equipment

  • Bowl, whisk

Method

Step 1: Prepare Your Ingredients
  1. Gather all your ingredients. It's always easier to create magic when your workspace is organized. Separate your egg yolks from the whites, and set them aside in a mixing bowl.
Step 2: Mix the Base
  1. In your mixing bowl with the egg yolks, add in the stone-ground mustard, raw cane sugar, white wine vinegar, and kosher salt. Whisk these ingredients together vigorously. You want to create a smooth mixture, incorporating the flavors well.
Step 3: Heat it Up
  1. Next, pour this mixture into a saucepan. Over low heat, gently stir until the sugar dissolves. This should take just a few minutes. Be careful! You don’t want to scramble the eggs, so patience is key.
Step 4: Add the Cream
  1. Once the sugar is dissolved, pour in the heavy whipping cream. Keep on that low heat, stirring constantly. This step is essential for achieving that creamy consistency. Continue cooking until the mixture slightly thickens, about 5 to 7 minutes.
Step 5: Final Touches
  1. Remove the sauce from heat. Stir in the freshly grated lemon zest and smoked paprika (if using). These notes of flavor elevate the sauce, adding depth.
Step 6: Cool and Serve
  1. Allow the sauce to cool slightly before serving. It can be enjoyed warm or chilled. A drizzle over your favorite dish or a simple dip for veggies – the choice is yours!
