  • Before you start, make sure you have all your ingredients measured out and ready. This makes the process smoother and more enjoyable. You’ll also need baking sheets, parchment paper, and a mixing bowl.
  • Preheat your oven to 350°F (175°C). This ensures your cookies bake evenly.
  • In a mixing bowl, combine the softened butter with both sugars. Using a mixer or a wooden spoon, beat them together until creamy. This will take about 2–3 minutes. Add the egg and almond extract, blending well until everything is incorporated.
  • In another bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add this mixture to your wet ingredients. Stir until just combined.
  • Gently fold in the oats, raisins, and chopped walnuts. Be careful not to overmix; you want just enough incorporation for the ingredients to blend.
  • Using a cookie scoop or a tablespoon, drop rounded balls of dough onto a baking sheet lined with parchment paper. Leave enough space between each cookie, as they will spread during baking.
  • Place the baking sheet in your preheated oven and bake for about 10–12 minutes, or until the cookies are golden brown around the edges. Once done, let them cool on the sheet for a couple of minutes before transferring them to a wire rack to cool completely.
