  • Begin by preheating your oven to 450°F (232°C). A hot oven is essential for popover success. As it heats, gather your ingredients and ensure your eggs are at room temperature.
  • Take your popover pan and generously grease each cup. You can use cooking spray or brush with melted butter. This step prevents the batter from sticking and ensures a smooth release, giving you beautifully formed popovers.
  • In a large mixing bowl, combine the eggs and vanilla extract. Whisk until well blended, then add in the melted butter, lukewarm milk, and sea salt. Mix this until smooth. Gradually incorporate the all-purpose flour and baking soda, whisking gently until there are no visible lumps. Be careful not to overmix; a few lumps are okay!
  • Pour the batter into the prepared popover pan, filling each cup about two-thirds full. If you fill them too high, they’ll overflow. Remember, they need space to rise up and puff beautifully.
  • Place the pan in your preheated oven. Bake for 20 minutes without opening the oven door. This is critical! If you open the door too early, the sudden change in temperature may cause your popovers to collapse. After 20 minutes, reduce the heat to 350°F (177°C) and bake for another 10-15 minutes until they are deep golden brown and crisp.
  • Once baked, remove the popovers from the oven. Serve them warm, and watch as your guests’ eyes light up! The aroma alone is mesmerizing, and the impressive puff will draw everyone in.

  • Room Temperature Eggs: Use eggs that are at room temperature. This helps create a better emulsion.
