Ingredients
  

  • 1 ½ cups thick plain Greek yogurt
  • Opt for a high-quality brand. This is the base of your sauce.
  • 2 tablespoons finely chopped fresh mint and/or dill
  • Fresh herbs are key. Feel free to mix both for a unique flavor profile.
  • 1 medium garlic clove finely minced or pressed

  • 2 cups freshly grated cucumber
  • Grate it using the large holes of a box grater. No need to peel!

  • 2 tablespoons cold-pressed extra-virgin olive oil

  • ¼ teaspoon ground black pepper

  • 1 tablespoon freshly squeezed lemon juice

  • 1 teaspoon grated lemon zest

Step 1: Gather Your Ingredients
  1. Start by assembling everything you need—a bowl for mixing, a box grater for the cucumber, and a cutting board and knife for the garlic and herbs. This will streamline your process.
Step 2: Prepare the Cucumber
  1. Use a box grater to finely grate the cucumber. Don’t bother peeling or seeding it; the skin holds nutrients. Place your grated cucumber in a clean kitchen towel or cheesecloth. Squeeze out excess moisture. This will help your tzatziki stay thick instead of watery.
Step 3: Mix the Base
  1. In a large mixing bowl, add the thick Greek yogurt. Next, toss in the freshly chopped mint and/or dill along with the minced garlic. This is where the flavor magic starts to happen.
Step 4: Add the Cucumber
  1. Fold in the grated cucumber, ensuring it's incorporated evenly. You should see the mixture turn a beautiful green color.
Step 5: Season
  1. Add the sea salt, cold-pressed olive oil, ground black pepper, lemon juice, and zest. Stir everything together until well combined. Taste it. Adjust the seasoning if necessary.
